I hadn’t seen Bittman’s recipe for ribollita. He would be laughed out of our Tuscan town if he presented a recipe like that. The most important thing is… where is the “ri” in Bittman’s ribollita. Where is the boil in Bittman’s ribollita?
Whole grain bread? Put in the oven? Surely you jest Mark.
I’ve seen that Bittman doesn’t know much about food in Italy, but didn’t think it had come to this. Ribollita in Tuscany is a simple minestrone, left overnight, and reboiled the next day. Made with Tuscan bread.
